Carrot Cake with chocolate topping | Quarantine recipes

This recipe for carrot cake with a Brazilian type of sweet topping is very easy and I got inspired by Rita Lobo, from Nhac GNT, and her video are well explained on YouTube. I changed topping from the original recipe, because I had a can of condensed milk open in the fridge and wanted to use it!

Carrot cake with chocolate topping

A moist carrot cake with a Brazilian type of topping, made with condensed milk.

CAKE

  • 3 Carrots (Raw, peeled and cut in thick slices)
  • 4 eggs
  • 1 cup vegetable oil (I used sunflower oil)
  • 1.5 cups sugar
  • 2 cups wheat flour (Sifted, preferably.)
  • 1 tbsp baking powder
  • 1 pinch salt
  • 1 tsp butter (to grease the cake pan)

TOPPING

  • 1/2 can condensed milk (or approximately 200g)
  • 1 tbsp butter
  • 2 tbsp dark chocolate powder
  • 1/2 cup water

CAKE

  1. Preheat the oven to 180°C/380°F.

  2. Grease a cake pan with butter and sprinkle flour.

  3. In a bowl, mix the sifted flour, baking powder and salt. Reserve.

  4. In the blender, mix raw carrots, eggs, sugar and oil. Blend until homogeneous.

  5. Mix the blender mix with the dry ingredients, blending gently. Don't need to over mix.

  6. Bake for about 1 hour (that's how long it took mine). Check with a toothpick or knife for readiness (coming out clean).

  7. Let it cool before taking out of the pan.

TOPPING

  1. Mix condensed milk, water, butter and chocolate powder in a pan. Bring to boil, mixing the whole time.

  2. It's ready when you continually see the bottom of the pan or it's not sticking too much at the bottom.

  3. Spread over the cooled cake.

We are here in these confined days, not knowing what the rest of the year will be like, because of this Covid-19 virus. In addition, our work routines with children at ome, family and friends relationships were changed from one day to the next. For sure, everyone is experiencing some level of stress right now.

As we are at home 100% of the time, I am cooking a lot more and trying to find different snacks every week, for this kids who never seem to stop eating.

And we, grown ups, well, there are times when we take stress to the stomach and just wanna eat. This is happening to us and we are trying to control the appetite, but it really not easy.
